The latest generation of AF 100 Digy fermenter makes it possible to produce a liquid leaven from 100% hydration. The precision in the fermentation times and temperatures allows you to master your recipe and your process. At the end of fermentation, the sourdough can be stored in the positive cold fermenter and kept for up to 48 hours, thanks to its cooling system by waffle tank. In addition, the machine's ease of cleaning means that a fresh and usable strain of sourdough is available on a daily basis. The AF 100 Digy fermenter facilitates cycle programming and management with its Digy touch interface, designed to be shock resistant and sealed against humidity and flour dust (international electrotechnical standard IP65).
